Upma is one of our favorite Kerala foods. But, as it has semolina as the main ingredient, I had eliminated Upma from my husband’s diet.
One day when I opened my refrigerator and saw the Cauliflower sitting there, a great idea came into my head. I thought, why not try the traditional Upma recipe with Cauliflower Couscous. Oh wow, I was so amazed by the taste.

Cauliflower couscous upma
INGREDIENTS:
Cauliflower florets- 1 small head
Organic coconut oil- 1 Tbsp
Chopped Red onion- 1 small roughly chopped
Black Mustard seeds- 1 tsp
Ginger- 2 Tbsp finely chopped
Mild Green chilly- 1 chopped
Curry leaves- few
Urid dal- 1 tsp (optional)
Salt
METHOD:
Pulse the cauliflower florets in a food processor until it becomes like couscous size.
Transfer it into a cheesecloth. Squeeze the water out.
In a pan, pour the coconut oil. Once the oil is hot, add the mustard seeds. Let it pop. Reduce the heat once it starts popping. To this, add onions, ginger, urid dal and, curry leaves. Sauté until the onion is slightly brown. Now add the cauliflower couscous and salt. Mix well. Let it cook until it becomes somewhat dry.
Serve immediately.
