For Keralites, Upma, made out of Semolina, is one of the favorite breakfast items. My husband is not an exception. He sacrificed one of his favorites for the past 3 years until I tried this samba wheat Semolina. I would say that it tasted the same or perhaps even tastier than the regular semolina that even our children requested to make it often. My husband has it with a medium ripe banana and/or with sunny side up egg. As he got the best post-meal reading after eating this, from now on, he can enjoy his favorite breakfast. Please read the ‘about me’ section to know why I’m talking about my husband’s post meal reading.

So here is the recipe(serves 1)

INGREDIENTS:

Samba wheat semolina- 1/3 cup (Those who are on a regular diet may use regular semolina)

Red onion- 1 small finely chopped

Ginger – finely chopped 2-3 Tsp

Rice Bran oil- 2-3 Tsp

Mustard seeds- 1/2 Tsp

Mild green chilly- 1 chopped

Curry leaves- few

water- 2/3 cup (double the amount of semolina)

Sea salt/ Pink Himalayan salt- to taste

Homemade organic ghee- optional 1-2 tsp

METHOD:

Roast the semolina over medium heat and keep it aside.

In a pan, add oil. Once the oil is hot, add mustard seeds. Let it pop. Reduce the heat. Add, onion, ginger, and curry leaves. Saute until it turns golden brown. Now add water and salt. Taste whether there is enough salt. (You shouldn’t add salt once you add semolina.) Let it boil. Once the water starts boiling, reduce the heat to medium and add roasted semolina. Stir continuously until the water gets absorbed. Add the ghee and mix well. This step is optional.

Our favorite combo is Upma and medium ripe banana.
