
I got an super simple yet delicious recipe of fried rice from my dear friend Jean IG: @jeansprivatekitchen @jeanwinterconsultancy. But as rice doesn’t suit our dietary needs I made it with quinoa. You have to try this. Super duper delicious.
INGREDIENTS: 2 portions
Organic white quinoa- 1/2 cup
Cabbage- 2 cups (roughly chopped)
Carrots- 1 small (cut into small cubes)
Beans- 10 (cut into small slices)
Spring onion- 6 (chopped)
freshly ground black pepper- 1/2 tsp (add less or more)
Low sodium soy sauce- 1-2 Tsp
Garlic- 7-8 cloves (thinly sliced)
Organic eggs- 2
Spicy grilled prawns- 10 cut into medium pieces (Check the recipe I have shared) Optional
Rice bran oil- 1-2 Tbsp + 2 Tsp
Sea salt
METHOD:
Cook Quinoa and keep it aside. Try to make the previous day if possible. If you are making on the same day, it should be completely cool. Due to our dietary needs I remove the starch completely. Those who are on a regular diet, cook quinoa exactly the way you cook white rice.
In a hot wok, add 2 Tsp of oil, add two eggs, a pinch of salt and black pepper. Make scrambled egg and keep it aside.
Add rest of the oil into the wok, put garlic first, followed by carrots and beans. Saute. Once it’s tender, add cabbage and spring onions followed by black pepper and salt. Saute. Once it’s cooked, add quinoa, salt, soy sauce and more black pepper (if needed). In the end add eggs and grilled prawns. Serve hot.
