I haven’t made anything this simple since I started cooking. It’s a simple recipe, but the taste is out of the world. I make this and keep in the refrigerator in an airtight container. I got this recipe from my mom’s dear friend, Indira who lives in Cochin. We call her Indira aunty. She is one amazing kind woman.She is from Madhya Pradesh but she lives in Cochin because of her husband’s job. Sharing the recipe here with her permission.
INGREDIENTS:
Raw mangoes/medium ripe mangoes- 2 (remove the skin and cut into small cubes)/ 2 cups
Organic jaggery powder- 4 Tsp
Himalayan salt-
Rice bran oil- 2 TbSp
Mustard seeds- 1 Tsp
Water- 1 cup
Kashmiri chilly powder- 1/2 tsp
METHOD:
Into a hot pan, add oil. Add mustard seeds. When it begins to splutter, reduce the heat, add chilly powder followed by mangoes, salt, and water. Mix well. Close the lid and let it cook until the mangoes become soft. Stir occasionally. Now add jaggery. Mix really well. Sweet and sour mango chutney is ready.
